Omakase menu 

What is omakase?


We serve omakase sushi. Omakase means: 'I leave it up to you'. With our omakase diner you will be surprised by the chefs who freshly prepare and serve the sushi with a lot of love and passion and with an accompanying explanation of the ingredients. Ken has put together beautiful menu's inspired by the Japanese style, combined with his own interpretation and signature.


We use the best quality original sushi rice (vinegared rice) at 37°, of course served with fresh fish and seafood at the right temperature. The ingredients are of high quality and depend on availability per day and season.


We currently have three omakase choices available. The omakase Regular, omakase Experience and omakase Advanced. View the menus and read more about the content, setting, prices and availability of these options.

Bookings


Don't wait too long, because we are often fully booked several weeks in advance. 

Reservations

Bookings can be made online via the booking system that can be found on our website. You can make a reservation up to six weeks in advance.

Choose the desired date and time, click on 'show available options' for availability. When your

preferred timeslot and menu  is fully booked, you'll see 'join waitlist'.

If a date cannot be clicked on, the booking system is still closed. We are often fully booked well in advance.
Please note: If the desired omakase menu is already fully booked on the date of your choice, it will changed to the next available date and timeslot. So please check carefully whether you have reserved the correct date and time.


We work with two shifts per night. The first starts at 5:30 p.m. and the second round at 8:30 p.m.. Unfortunately, a different start or time is not possible. Read more about the availability per menu under 'Menu'.

You can add a comment when booking, such as mentioning an allergy or your preference for a table or high barseat at the omakase Regular. We always read and noted our the comments. We take the requests into account as best as possible. You can also change the date and time via the confirmation email.


Would you like to come and eat with a large group and would you like to book further in advance to be sure of enough available seats? Or do you want to change the menu or the number of people? Please contact us by email. You can also send us an email for other questions regarding reservations.

Pre payment

Due to previous experiences, we work with pre-payment to prevent 'no shows'. This is to give other guests the opportunity to reserve any vacant spots in time and to give ourselves the opportunity to fill the vacant spots by offering them to the people on the waiting list. This way we can purchase without having a lot of 'waste' left and avoid unnecessary empty seats.


The pre payment concerns the amount of the menu per person. You can order and pay for the drinks and any silver or golden upgrades on the evening itself. Changes that affect the prepayment will be settled on the evening itself too.


You will receive a full refund if you cancel up to one day in advance.
In case of serious, unforeseen reasons for cancellation on the day of reservation, you can contact us for consultation. We can be reached by telephone from Wednesday to Sunday from 2 p.m. (please try again and send a message if we are not directly anwser the phone).


If you forget your reservation, don't show up or do not cancel or contact us in time, you will unfortunately not receive a refund.


We recommend that you carefully check the reserved date and time and correctly note it in your agenda. You will also receive a reminder of your booking two days in advance.


If you don't want to cancel your reservation, but you are coming with less people due to illness for example? Please always let us know so that we can also fill up these spots on time. If we hear about it at the start, we can no longer offer the extra spot  to other guests and cannot use the prepared fish. In that case we unfortunatley cannot give a refund.

Waiting list

When the day, time and menu of your choice are fully booked, you will see 'waiting list' appear in the booking system. This is an option to register for the waiting list.


Once you have registered, you will automatically receive a notification, along with everyone else on the waiting list, the moment there are cancellations and seats become available again. You'll have the option to make a reservation as long as the seats are still available. So the chances are equal, but it often goes very quickly. Just like you, we cannot estimate the likelihood of cancellations. If you no longer wish to receive notifications, you can remove yourself from the waiting list via the confirmation email.


If you already have a reservation, but would like a different time or menu, please add a comment to your waiting list registration. That way we can then take this into account in case spots become available.


Sometimes we will send you an option reservation. You can confirm this via the same message by paying the prepayment before the indicated period, or canceling the option if the chosen day and time is no longer convenient.

When you enter our building you will be welcomed in the part that we have renamed 'Bar Bee'. A joke from Ken; with a wink to his wife's name and his love for her. Ken and Bar Bee let's go party!


This is already the place where our omakase guests can have drinks before and after their omakase dinner. But now we also want to give guests without a reservation the opportunity to have a drink and fingerfood. Come by and try our wide range of sake (more than 40 different and exclusive sake), Japanese whiskey and more!

We strive to offer the hospitable, casual atmosphere that you know from us in the bar too. A cozy place to have a drink at the bar with a snack, or to hang out or play games with friends and family in the Sky lounge.


Our nephew Sky will provide a nice choice of (Japanese-oriented) drinks and Ken's wife Bee and our sister-in-law Nid will provide tasty Japanese and Thai style fingerfood. Something that is completely in line with our family business and brings the two worlds together: Japan and our Thai roots.

Holidays 2023

We are closed during Christmas (December 25th and 26th)
and on New Year's Day (January 1st).

We are open as usual on Christmas Eve (December 24th).
We are open on New Year's Eve (December 31st), but we only open the first shift at 5:30 PM. We close the restaurant that evening at 8:30 PM.

Wij deden de Omakase Experience. Geweldige sfeer, fijn informeel maar toch oh zo professioneel! Ook veel gelachen door Ken die graag een babbeltje maakt tussen het bereiden door! Heerlijke smaken, alles voor je neus bereid (wij hadden een extra goed plekje), heerlijk vers en over alles een toelichting/verhaal van afkomst. Ook werd vaak verteld hoe je het beste iets kan eten voor smaakoptimalisatie en waren er goede sake pairings. Een echte aanrader! De volgende keer advanced denk :)

I had dinner with my sister at this restaurant to celebrate her birthday. We chose the advanced experience, even though we hadn’t dine here before. The food was delicious, and I got to try about 20 different bites, from otoro to wagyu. Since I don't eat meat, I had fish instead.
Head Chef Ken did a great job, and we were really impressed. We only wished they had a Japanese dessert, like mochi. The staff was very friendly and made us feel welcome throughout our visit.

I’ve tried many omakases both in Australia and in Japan so have relatively high standards when it comes to sushi. Ken’s sushi offers a unique take on omakase at an attractive price with great customer service from both the chef and wait staff however it is less suited for those seeking a traditional authentic omakase experience which is the only reason why I am giving it 4 stars. Some dishes would never appear at all in a traditional omakase (e.g. aburi salmon sushi with kewpie mayo, freshly smoked salmon sashimi, wasabi infused shallot sauce instead of wasabi paste and Thai style egg pudding instead of tamagoyaki). They did have upgrades available as well which had higher quality pieces like chutoro,otoro etc but on this occasion we did not get a chance to try.

All in all it was a very enjoyable Japanese meal for Amsterdam standards and definitely highly recommended for those new to omakase/ open to trying different style of omakase.

Absolutely spectacular sushi bar. Proper omakase experience, with a knowledgeable chef guiding you through the experience.

Every piece you get is consistently great. The salmon is some of the best I've eaten. I had never tried a swordfish nigiri before, which was really welcome finding. Getting the extra pieces is a must, imo. The fatty tuna and the wagyu were can't miss pieces.

In the end, they ask you which piece was your favorite, and you get to try that one again. I've seen that in very few sushi bars, and I wish it was more common as it's a great way to end a superb meal.

As a bonus, it's less expensive than other omakase experiences, especially considering it's in the middle of Amsterdam. Good sushi is never cheap, but this one didn't feel out of line at all.

All in all, one of the best sushi experiences I've had in Europe.
